Delicious Chinese Noodle Recipes


Chinese wheat noodles are double cooked, first in water until al dente and then mounded in a frying pan until crisp and brown. Then its smothered with a delicious sauce made from rice wine, soy sauce and wilted spinach. Next comes asparagus simmered in garlic and ginger.

Noodles Made of wheat, rice or egg, and ranging from flat and wide to thin and spindly, noodles are a benchmark of Chinese cuisine. We've gathered our best recipes from stir-fries and soups to simply boiled and, of course, spicily dressed.

1.CHICKEN CHOW MEIN:

To make really stand-out chow mein, start with high-quality noodles. Ching recommends using shi wheat flour noodles ("shi" means "thin" in Mandarin), which cook in only three minutes. Toss the noodles in a wok along with crunchy vegetables and strips of spicy chicken for a few minutes and you've got yourself a "mein" dish that's as easy as it is healthy.

INGREDIENTS:

*5 ounces dried yellow Shi wheat flour noodles* or medium egg noodles
*1 teaspoon sesame oil, plus more as needed
*11 ounces skinless chicken breasts, sliced into strips
*Dash dark soy sauce
*1 teaspoon five-spice powder
*1 teaspoon chile sauce, optional
*1 tablespoon cornstarch
*2 tablespoons groundnut oil (peanut)
*1 red bell pepper, seeded and finely sliced
*5 ounces bean sprouts
*1 large spring onion (green), sliced lengthwise
*2 tablespoons light soy sauce
*Freshly ground black pepper, finely ground
*Can be found at specialty Asian markets.

DIRECTIONS:

*Cook the noodles for 3 minutes in a pan of boiling water until al dente, or as per the package instructions. Drain, then run them under cold running water, and drain again. Drizzle with a few splashes of sesame oil, and toss through to prevent them from sticking.

*Season the chicken with a splash of dark soy sauce, the five-spice powder, and chile sauce, if using. Mix well. Coat the chicken breasts lightly with the cornstarch.

*Heat a wok over a high heat, add the groundnut or peanut oil, and heat until smoking. Then, add the chicken, and stir-fry for 2 to 3 minutes, or until cooked through.

*Add the red bell pepper, and stir-fry for 1 minute, then add the bean sprouts and green onion and stir-fry for less than 1 minute. Add the cooked noodles, and season with the light soy sauce, 1 teaspoon toasted sesame oil, and black pepper, to taste. Stir well and serve immediately.

2.Yakisoba Chicken:

Ingredients:

 *(1/2 teaspoon sesame oil
*1 tablespoon canola oil
*2 tablespoons chile paste
*2 cloves garlic,
*chopped 4 skinless,
*boneless chicken breast halves cut into 1 inch cubes
* 1/2 cup soy sauce
*1 onion, sliced lengthwise into eighths
*1/2 medium head cabbage coarsely chopped
*2 carrots coarsely chopped
*8 ounces soba noodles, cooked and drained Add all ingredients to list.

Directions:

*In a large skillet combine sesame oil, canola oil and chili paste; stir-fry 30 seconds. Add garlic and stir fry an additional 30 seconds.

*Add chicken and 1/4 cup of the soy sauce and stir fry until chicken is no longer pink, about 5 minutes.

*Remove mixture from pan, set aside, and keep warm.


*In the emptied pan combine the onion, cabbage, and carrots. Stir-fry until cabbage begins to wilt, 2 to 3 minutes.

*Stir in the remaining soy sauce, cooked noodles, and the chicken mixture to pan and mix to blend.

*Serve and enjoy!
